There is a lot of buzz now around staying healthy with the Corona Virus shutting down the world. Naturally trying to eat healthy is on many people’s minds. We have heard a lot about Vitamin C, Zinc and many more supplements. I would say there are many companies attempting to capitalize off people wanting to stay healthy during this time. To be honest with you I don’t take a lot of supplements myself, I try to get what I need from food. When I do feel like I need an extra boost I might take a Whole Food Vitamin like MegaFood, or some Vitamin B12 or D. I’m a huge proponent of juicing, I mainly drink vegetables juices with the occasional apple added here or there. Which brings me to the topic of Chlorophyll, the deep green liquid that comes from plants. We’ve all been told it’s important to have our greens in our diet but what makes chlorophyll so special? Studies show that chlorophyll is nearly identical to hemoglobin our blood. Healthy blood is essential to life and not only is excellent for people with anemia, but it creates more oxygen in our blood. Yes, you heard that right, more oxygen. Right now we are hearing of people with this virus desperately needing more oxygen. Adding chlorophyll is a great idea to supplement with regardless of whether you are concerned about corona or not. What a Healthy Lifestyle Means To Me
Coconut Curry Soup
When it comes to food I like to keep it simple but super flavorful. Soup really is one of my all time favorite foods, as it's very easy to heat up and fills you with warmth. Even though its' summer I still love to eat soup. It's easy to digest and can be very light depending on the ingredients you use. This particular soup I sauteed 1 head of cauliflower in coconut oil with curry powder, sea salt and pepper. Once the cauliflower is browned I added a little stock , but you can use chicken or vegetable depending on what your dietary preferences are. Once the cauliflower is cooked I transfer it into a blender. It isn't necessary to use a Vitamix a regular blender works perfectly fine. I add in one can of organic coconut milk, another teaspoon of curry powder, 1/2 cup of broth either vegetable or chicken. I blend it really well for about 2-3 min. The consistency is usually a little on the thicker side, I transfer the creamy curry soup back into a pot and lightly heat it up for a few minutes. Voila you have a perfect healthy soup! I like this soup on its own but it can make a great starter too.

Curry Powder
1 Can of Coconut Milk
Sea Salt
1 Head of Cauliflower
Pepper
Coconut Oil
Vegetable or Chicken Broth
Easy Healthy Stir Fry
I know dinner can sometimes be annoying to think about, especially when we live busy lives. I'm one of those people who end up at Whole Foods at least once per day. If you are a smart shopper you know this isn't the best because we end up spending more time and money rather than if we went once per week and got everything we needed for the week ahead.
The stir fry I have whipped up above can be super simple for you to create at home. You can even buy a pre-cut and washed stir fry veggie bag at just about any market. That removes the step of you having to spend time washing and chopping. Otherwise I recommend simply choosing your favorite veggies and do the chopping/ washing yourself. I used Yellow Fin Tuna in this particular dish and chopped it up to preferable sizes. Moreover, I used quinoa instead of brown rice for base but either are great choices. Make sure to never use white rice as its' been processed making it devoid of extra nutrition and can even spike your blood sugar. For an added "Asian Flavor" I sauteed all the ingredients in toasted sesame oil. Have your quinoa/ brown rice cooking for about 15-20 min before you start cooking the veggies and tuna. I chose to drizzle organic Gluten Free Tamari on the veggies as it is a healthier alternative to Soy Sauce. The veggies should only take 5-10 minutes and the fish should be about 5 min depending on how rare you enjoy your fish. You should be all set to enjoy this clean easy dish alone or with your family! Below is a list of all the ingredients you will need.

Yellow Fin Tuna or Seafood of your choice. (Wild-Caught)
Pre-washed Asian Veggie Bag or pick your own. (Organic)

Add Fermented Foods to Dinner
Dinner doesn't have to be complicated or time consuming in order to be healthy. This was dinner for me the other night: Yellow Fin Tuna seared in coconut oil for about 2-3 min on each side. I added some spinach, tomatoes and a drizzle of olive oil for a simple salad. A little secret to maintaining a healthy gut with plenty of good bacteria, plus a little assistance when it comes to digesting your food is Kimchee a Korean superfood that consists of fermented veggies. Fermented foods are tasty and highly beneficial to you. Most health food stores carry them in jars of their refrigerated section. Get adding them to your daily meals and notice a difference!
